Ingredients

  • 1 pounds Lean beef chuck roast
  • 1 cup Low sodium beef broth
  • 1 medium Onion, diced
  • 3 Garlic cloves, minced
  • 1 tablespoon Chili powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 12 Corn tortillas
  • 1 cup Salsa
  • 0.25 cup Cilantro leaves, chopped
  • 4 Lime wedges

Directions

Step 1

Trim any visible fat from the beef chuck roast.

Step 2

In a slow cooker, add the lean beef, low sodium beef broth, diced onion, minced garlic, chili powder, ground cumin, paprika, salt, and black pepper.

Step 3

Cover and cook on low for approximately 6-8 hours or until the beef becomes tender and can be easily shredded with a fork.

Step 4

Once the beef is done, remove it from the slow cooker and shred it using two forks.

Step 5

Return the shredded beef to the slow cooker and mix it with the juices; let it heat on low for another 15 minutes to absorb the flavors.

Step 6

Meanwhile, warm the corn tortillas on a non-stick skillet or in the oven until they are pliable.

Step 7

Assemble the tacos by placing approximately 2-3 tablespoons of the shredded beef onto each corn tortilla.

Step 8

Top the beef with salsa and chopped cilantro.

Step 9

Serve the tacos with lime wedges on the side for an added burst of flavor when squeezed over the top.
