Ingredients

  • 1 cup red lentils
  • 1 tablespoon olive oil
  • 1 medium, chopped onion
  • 2 cloves, minced garlic
  • 1 medium, diced carrot
  • 1 diced celery stalk
  • 1 large, chopped tomato
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.5 teaspoon turmeric powder
  • 7 cups low-sodium vegetable broth
  • 1 tablespoon lemon juice
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 cup, chopped fresh cilantro

Directions

Step 1

Rinse the red lentils in cold water until water runs clear. Drain and set aside.

Step 2

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until the onion becomes translucent, about 5 minutes.

Step 3

Add the minced garlic, diced carrot, and diced celery to the pot. Continue to sauté for another 3-4 minutes until the vegetables start to soften.

Stir in the chopped tomato, ground cumin, ground coriander, and turmeric powder. Cook for another 2 minutes, allowing the spices to bloom.

Add the rinsed lentils and low-sodium vegetable broth to the pot. Stir well and bring to a boil.
