Rinse the red lentils in cold water until water runs clear. Drain and set aside.
In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until the onion becomes translucent, about 5 minutes.
Add the minced garlic, diced carrot, and diced celery to the pot. Continue to sauté for another 3-4 minutes until the vegetables start to soften.
Stir in the chopped tomato, ground cumin, ground coriander, and turmeric powder. Cook for another 2 minutes, allowing the spices to bloom.
Add the rinsed lentils and low-sodium vegetable broth to the pot. Stir well and bring to a boil.
Once boiling, reduce the heat to low, cover, and let simmer for about 30 minutes, or until the lentils and vegetables are tender.
After 30 minutes, stir in the lemon juice, salt, and black pepper. Simmer for an additional 5 minutes.
Using an immersion blender, carefully blend the soup to your desired consistency. You can also use a blender in batches, making sure to vent the lid to avoid accidents.
Taste the soup and adjust the seasoning if necessary.
