Ingredients

  • 500 grams Lean lamb leg
  • 120 ml Low-fat yogurt
  • 2 tablespoons Lemon juice
  • 3 pieces Garlic cloves
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 large Red onion
  • 1 large Red bell pepper
  • 1 large Green bell pepper
  • 8 pieces Wooden skewers

Directions

Step 1

Begin by soaking the wooden skewers in water for at least 30 minutes to prevent them from burning during grilling.

Step 2

Trim any excess fat from the lamb leg and cut the meat into 2-inch cubes.

Step 3

In a large bowl, combine low-fat yogurt, lemon juice, minced garlic, cumin, paprika, dried oregano, salt, and black pepper to form the marinade.

Step 4

Add the lamb cubes to the marinade, ensuring each piece is well-coated. Cover and refrigerate for at least 1 hour, preferably overnight for optimal flavor.

Step 5

Cut the red onion, red bell pepper, and green bell pepper into 1-inch pieces.

Step 6

Thread the lamb cubes onto the soaked skewers, alternating with pieces of onion and bell peppers.

Step 7

Preheat the grill to medium-high heat.

Step 8

Once heated, place the kebabs on the grill and cook for 10-12 minutes, turning occasionally until the lamb is browned on all sides and cooked to your desired doneness.

Step 9

Remove the skewers from the grill and let them rest for a few minutes before serving.

Step 10

Serve the shashlik baranina hot, garnished with fresh herbs of your choice if desired.
