Ingredients

  • 3 cups whole wheat flour
  • 1 cup warm water
  • 1 tablespoon active dry yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 1 pound lean ground beef
  • 1 medium onion, finely chopped
  • 1 medium tomato, finely chopped
  • 0.5 cup parsley, chopped
  • 2 tablespoons lemon juice
  • 1 teaspoon allspice
  • 0.5 teaspoon cumin
  • 0.5 teaspoon pepper
  • 1 cup low-fat yogurt

Directions

Step 1

Step 1: In a large bowl, combine the warm water, yeast, and sugar. Let it sit for about 10 minutes until it becomes frothy.

Step 2

Step 2: Add the whole wheat flour, salt, and 1 tablespoon of olive oil to the yeast mixture. Mix until a dough forms. Knead for about 10 minutes until smooth and elastic. Place in a greased bowl, cover, and let it rise in a warm place for 1 hour or until doubled in size.

Step 3

Step 3: Preheat the oven to 375°F (190°C).

Step 4

Step 4: In a skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent. Add the lean ground beef and cook through, breaking apart with a spoon.

Step 5

Step 5: Stir in the chopped tomato, parsley, lemon juice, allspice, cumin, and pepper. Cook for an additional 5 minutes. Remove from heat and let cool slightly.

Step 6

Step 6: Punch down the risen dough and divide it into 12 equal pieces. Roll each piece into a circle about 4 inches in diameter.

Step 7

Step 7: Place approximately 2 tablespoons of the meat filling in the center of each dough circle. Fold the edges over the filling to form a triangle, pinching the corners to seal.

Step 8

Step 8: Place the sfiha on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes, or until golden brown.

Step 9

Step 9: Serve warm with a side of low-fat yogurt for dipping.
