  • 2 tablespoons Low-sodium soy sauce
  • 1 tablespoon Lime juice
  • 2 tablespoons Fresh cilantro
  • 0.5 teaspoon Black pepper
  • 500 milliliters Water

Directions

Step 1

Begin by preparing the rice noodles according to the package instructions. Typically, this involves soaking them in hot water for 8-10 minutes until softened. Drain and set aside.

Step 2

While the noodles are soaking, clean the shrimp and scallops. Pat them dry with paper towels to remove excess moisture.

Step 3

In a large non-stick pan, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and ginger, and sauté for about 30 seconds until fragrant.
