Ingredients

  • 4 large Eggs
  • 3 tablespoons Skim milk
  • 1 cup Baby bella mushrooms
  • 2 tablespoons Fresh chives
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 spray Non-stick cooking spray

Directions

Step 1

Wash and thinly slice the baby bella mushrooms. Set them aside.

Step 2

In a medium bowl, whisk together the eggs and skim milk until well combined and slightly frothy. Add salt and black pepper, and whisk again.

Step 3

Spray a non-stick skillet with cooking spray and heat over medium heat.

Step 4

Add the sliced mushrooms to the pan, cooking for about 4-5 minutes until they have softened and released their juices. Stir occasionally to ensure even cooking.

Step 5

Pour the egg mixture over the mushrooms in the skillet. Allow the eggs to cook slightly before stirring.

Step 6

Using a spatula, gently stir the eggs, pulling them from the edges of the pan to the center. Continue this process while cooking to ensure soft and creamy scrambled eggs.

Step 7

Cook the eggs until they are just set but still slightly moist, about 3-4 minutes.

Step 8

Sprinkle freshly chopped chives over the eggs and gently fold them in right before finishing cooking.

Step 9

Remove the pan from the heat. Serve the scrambled eggs immediately, garnished with additional chives if desired.
