Start by preparing the bitter melon. Slice it in half lengthwise, scoop out the seeds and pith, then slice the melon into thin half-moons.

Lightly salt the bitter melon slices and let them sit for about 5 minutes to draw out bitterness. Rinse them under cold water and pat dry with a paper towel.
