  • 1 cup All-purpose flour
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 0.75 cup Granulated sugar
  • 0.5 cup Unsweetened applesauce
  • 2 large Egg whites
  • 1 teaspoon Vanilla extract
  • 0.25 cup Mini chocolate chips (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a medium-sized bowl, whisk together the cocoa powder, all-purpose flour, baking soda, and salt. Set aside.

Step 3

In another large mixing bowl, beat together the granulated sugar and unsweetened applesauce until the sugar starts to dissolve.

Step 4

Add the egg whites and vanilla extract to the applesauce mixture and whisk well until everything is combined.

Step 5

Gradually add the dry ingredients to the wet ingredients, stirring gently until a smooth dough forms. Be careful not to overmix.

Step 6

If desired, fold in the mini chocolate chips to the dough.

Step 7

Using a tablespoon, drop rounded mounds of dough onto the prepared baking sheet, leaving a couple of inches between each cookie.
