  • 4 medium ripe tomatoes
  • 1 teaspoon salt
  • 1 medium onion
  • 0.5 cup low-fat mayonnaise
  • 1 cup reduced-fat sharp cheddar cheese
  • 1 pre-made whole wheat pie crust
  • 0.5 cup fresh basil leaves
  • 0.5 teaspoon freshly ground black pepper
  • 1 as needed olive oil cooking spray

Directions

Step 1

Preheat your oven to 350°F (175°C). Spray a 9-inch pie pan with olive oil cooking spray.

Step 2

Slice the tomatoes into 1/4-inch thick slices. Lay them out on paper towels and sprinkle lightly with salt. Cover with more paper towels and let them drain for about 10 minutes to remove excess moisture.
