Ingredients

  • 300 grams all-purpose flour
  • 7 grams active dry yeast
  • 150 milliliters warm water
  • 50 milliliters skim milk
  • 1 large egg
  • 10 grams sugar
  • 5 grams salt
  • 30 milliliters olive oil
  • 200 grams low-fat turkey sausage
  • 50 grams onion
  • 2 cloves garlic
  • 2 grams black pepper
  • 10 grams parsley

Directions

Step 1

In a small bowl, mix the yeast with warm water and a pinch of sugar, let it sit for about 5 minutes until it becomes frothy.

Step 2

In a large mixing bowl, combine the flour, sugar, and salt. Make a well in the center and pour in the yeast mixture, skim milk, egg, and olive oil.

Step 3

Stir the mixture with a spoon until a soft dough begins to form, then knead on a floured surface for about 8 minutes until the dough is smooth and elastic.

Step 4

Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until it doubles in size.

Step 5

While the dough rises, finely chop the onion and garlic.

Step 6

In a non-stick pan over medium heat, cook the turkey sausage while breaking it up with a spoon. Add the onion and garlic, cooking until the onion is translucent. Season with black pepper.

Step 7

Remove the sausage mixture from heat and stir in chopped parsley. Allow to cool.

Step 8

Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.

Step 9

Once the dough has doubled in size, punch it down and divide it into 8 equal pieces.

Step 10

Roll each piece into a ball, then flatten it into a disk. Place about a tablespoon of the sausage mixture in the center and gather the edges of the dough to seal it into a bun.

Step 11

Place each bun seam side down on the prepared tray. Cover and let them rest for another 10 minutes.

Step 12

Brush the tops of the buns with a little milk or beaten egg for a glossy finish if desired.

Step 13

Bake in the oven for 12-15 minutes or until golden brown.

Step 14

Let the buns cool slightly on a wire rack before serving.
