  • 1.5 cups brown rice
  • 3 cups vegetable broth
  • 3 large egg whites
  • 1 cup low-fat cottage cheese

  • 1 medium, grated zucchini
  • 4 chopped green onions
  • 0.5 chopped red bell pepper
  • 2 cloves, minced garlic
  • 0.25 cup, chopped fresh parsley
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0 as needed olive oil spray

Directions

Step 1

Preheat your oven to 350°F (175°C). Lightly spray a non-stick loaf pan with olive oil spray.

Step 2

In a medium saucepan, combine the brown rice and vegetable broth. Bring to a boil over high heat, then reduce the heat to low, cover, and simmer for about 40 minutes until the rice is tender and the liquid is absorbed. Let it cool slightly.
