Ingredients

  • 1 cup dry green lentils
  • 3 cups water
  • 1 medium onion
  • 1 medium carrot
  • 2 cloves garlic cloves
  • 0.5 cup whole wheat bread crumbs
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 cup fresh parsley
  • 1 tablespoon lemon juice
  • 1 can olive oil spray

Directions

Step 1

Rinse the lentils under cold water. In a medium saucepan, combine the lentils and water. Bring to a boil over high heat, then reduce the heat to medium-low and simmer for 20-25 minutes until the lentils are tender. Drain any excess water and let cool slightly.

Step 2

While the lentils are cooking, finely chop the onion and carrot. Mince the garlic cloves.

Step 3

In a non-stick pan, sauté the onion and carrot over medium heat for 5-7 minutes until softened. Add minced garlic and cook for an additional 1 minute.

In a large mixing bowl, combine the cooked lentils, sautéed vegetables, bread crumbs, ground cumin, coriander, smoked paprika, salt, and pepper. Mix well.
