  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Rinse the brown rice under cold water until the water runs clear, then drain.

In a medium saucepan, bring 2 cups of low-sodium beef broth to a boil. Add the drained rice, cover, and reduce the heat to low. Simmer for 20 to 25 minutes, or until the rice is tender and the liquid is absorbed. Remove from heat and let the rice sit, covered, for 5 minutes, then fluff with a fork.
