  • 1 pound lean ground beef (93% lean)
  • 3 medium-sized russet potatoes

  • 1 red bell pepper

  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 2 green onions, sliced

Directions

Step 1

Peel the potatoes and dice them into small 1/2-inch cubes. Set aside in a bowl of cold water to prevent browning.

Chop the onion and red bell pepper. Mince the garlic if not using pre-minced.

In a large non-stick skillet, heat the olive oil over medium heat.
