Ingredients

  • 500 g Duck breast, skinless
  • 4 pieces Whole wheat burger buns
  • 1 large Egg white
  • 30 g Panko breadcrumbs
  • 2 tbsp Fresh parsley, chopped
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Paprika
  • 0.5 tsp Ground black pepper
  • 0.5 tsp Salt
  • 4 pieces Lettuce leaves
  • 1 medium Tomato, sliced
  • 0.5 medium Red onion, thinly sliced
  • 1 as needed Olive oil spray
  • 4 tsp Dijon mustard

Directions

Step 1

Cut the duck breast into small cubes and place them in a food processor. Pulse until the meat is finely ground, taking care not to over-process.

Step 2

In a large bowl, combine the ground duck, egg white, panko breadcrumbs, parsley, garlic powder, onion powder, paprika, ground black pepper, and salt. Mix until the ingredients are well incorporated.

Step 3

Divide the duck mixture into four equal parts and shape them into burger patties, each approximately 1-inch thick.

Step 4

Preheat a grill or non-stick skillet over medium-high heat. Lightly spray with olive oil.

Step 5

Place the duck patties on the grill or skillet and cook for about 6-8 minutes on each side, or until they reach an internal temperature of 75°C (165°F).

Step 6

While the burgers are cooking, lightly toast the whole wheat buns on the grill until golden brown, about 1-2 minutes.

Step 7

Assemble each burger by spreading 1 teaspoon of Dijon mustard on the bottom half of each bun.

Step 8

Place a cooked duck patty on top, followed by a lettuce leaf, a slice of tomato, and a few slices of red onion.

Step 9

Cap with the top half of the bun and serve immediately.
