Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 2 teaspoons olive oil
  • 2 pieces large yellow onions
  • 1 tablespoon balsamic vinegar
  • 1 cup low-sodium chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper

Directions

Step 1

Slice the onions thinly and set aside.

Step 2

In a large skillet, heat 1 teaspoon of olive oil over medium heat.

Step 3

Add the sliced onions to the skillet and cook, stirring occasionally, for about 10-15 minutes or until they are golden brown and caramelized. If the onions start to stick, add a little water to deglaze the pan.

Step 4

Once the onions are caramelized, add 1 tablespoon balsamic vinegar, stir well, and cook for another 2-3 minutes. Remove the onions from the skillet and set aside.

Step 5

Season the chicken breasts on both sides with garlic powder, thyme, rosemary, salt, and black pepper.

Step 6

In the same skillet, add the remaining 1 teaspoon olive oil and increase the heat to medium-high.

Step 7

Add the seasoned chicken breasts to the skillet and cook for about 5-6 minutes on each side, or until they are browned and cooked through.

Step 8

Reduce the heat to low and pour in the chicken broth. Use a wooden spatula to scrape any bits off the bottom of the pan.

Step 9

Return the caramelized onions to the skillet with the chicken. Cover the skillet and let everything simmer for about 10 minutes, allowing the flavors to meld together.

Step 10

Remove from the heat and let rest for a few minutes before serving.

Step 11

Serve the savory chicken topped with a generous portion of the caramelized onions.
