Ingredients

  • 200 g Boneless, skinless chicken breast
  • 1 tablespoon Olive oil
  • 1 medium Onion, finely chopped
  • 2 cloves Garlic, minced
  • 200 g Button mushrooms, sliced
  • 100 ml Chicken stock
  • 2 tablespoons Whole wheat flour
  • 50 ml Low-fat milk
  • 1 teaspoon Dried thyme
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 sheets Reduced-fat puff pastry sheets
  • 1 whole Egg white
  • 1 tablespoon Water

Directions

Step 1

Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper.

Step 2

Chop the chicken breast into small cubes.

Step 3

Heat olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, sauté for 2-3 minutes until translucent.

Add the chicken cubes to the skillet and cook for 5-6 minutes until browned.

Stir in the sliced mushrooms and cook for another 3 minutes until they begin to soften.

Add the chicken stock and let simmer for a minute.

Sprinkle the flour over the mixture, stirring to combine and thicken.
