Ingredients

  • 1 sheet low-fat puff pastry sheet
  • 150 grams frozen spinach
  • 100 grams low-fat cottage cheese
  • 50 grams reduced-fat mozzarella cheese
  • 1 large egg white
  • 0.5 teaspoons garlic powder
  • 0.5 teaspoons onion powder
  • 1 teaspoon dried oregano
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon all-purpose flour (for dusting)

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

Thaw the frozen spinach and remove as much excess water as possible by squeezing it in a clean towel.

Step 3

In a mixing bowl, combine the spinach, cottage cheese, mozzarella cheese, egg white, garlic powder, onion powder, dried oregano, salt, and black pepper. Mix well until all ingredients are incorporated.

Step 4

Lightly flour a clean surface and roll out the low-fat puff pastry sheet into a 12x12 inch square.

Step 5

Spread the spinach and cheese mixture evenly over the puff pastry, leaving a small margin around the edges.

Step 6

Carefully roll the pastry into a tight log, starting from one side. Use a little water along the edge of the pastry to seal the roll if necessary.

Step 7

Once rolled, slice the log into approximately 16 equal pieces.

Step 8

Place the pinwheels on a baking tray lined with parchment paper, cut side up.

Step 9

Bake in the preheated oven for 15-20 minutes or until the pastry is golden brown and cooked through.

Step 10

Allow to cool slightly before serving. Enjoy your low-fat savory cheese and spinach pinwheels!
