Ingredients

  • 2 pieces Whole wheat tortillas
  • 4 large Egg whites
  • 0.5 cup Low-fat cheddar cheese, shredded
  • 1 cup Baby spinach leaves
  • 0.5 cup Red bell pepper, finely chopped
  • 2 tablespoons Green onions, sliced
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 second spray Olive oil spray
  • 0.25 cup Salsa
  • 0.25 cup Fat-free Greek yogurt

Directions

Step 1

Heat a non-stick skillet over medium heat and lightly coat it with olive oil spray.

Step 2

Add the red bell pepper and green onions to the skillet and sauté for about 3 minutes until they begin to soften.

Step 3

Add the baby spinach to the skillet and cook for 1-2 minutes until it wilts.

Step 4

Pour in the egg whites and season with salt and black pepper. Stir gently until the egg whites are fully cooked, about 3-4 minutes.

Remove the egg mixture from the skillet and set aside.
