Ingredients

  • 500 grams Lean ground beef
  • 200 grams Cooked and drained spinach
  • 1 medium Onion, finely chopped
  • 1 clove Garlic clove, minced
  • 2 large Egg whites
  • 50 grams Whole wheat breadcrumbs
  • 100 grams Low-fat cheese, shredded
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Paprika
  • 1 as needed Olive oil spray
  • 4 large Whole wheat tortillas
  • 2 tablespoons Parsley, chopped

Directions

Step 1

Preheat your oven to 180°C (350°F).

Step 2

In a large skillet, spray a light coating of olive oil and place it over medium heat.

Step 3

Add the chopped onion and minced garlic to the skillet and sauté for about 3-4 minutes until the onion becomes translucent.

Step 4

In a large mixing bowl, combine the lean ground beef, cooked spinach, sautéed onion and garlic, egg whites, whole wheat breadcrumbs, salt, black pepper, and paprika. Mix everything well until it's evenly combined.

Step 5

Lay a whole wheat tortilla flat on a clean surface. Spread a portion of the meat mixture evenly over the tortilla, leaving about an inch margin at the edges.

Sprinkle a portion of the low-fat cheese over the meat mixture.

Carefully roll the tortilla up tightly to enclose the filling. Repeat the process for the remaining tortillas.
