Ingredients

  • 1 pound lean ground beef (93% lean or higher)
  • 1 cup brown rice
  • 1.5 cups low-sodium beef broth
  • 3 tablespoons soy sauce (low sodium)
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 3 stalks green onions, thinly sliced
  • 1 medium red bell pepper, diced
  • 2 medium carrots, julienned
  • 1 teaspoon sesame oil
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon salt

Directions

Step 1

Rinse the brown rice under cold water. In a medium saucepan, combine the rice and beef broth. Bring to a boil over high heat.

Once boiling, reduce the heat to low, cover the saucepan, and simmer for 25-30 minutes, or until the rice is tender and has absorbed the liquid.
