Ingredients

  • 1 teaspoon Dried thyme
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash all the vegetables thoroughly under running water.

Step 3

Cut the zucchini into thick slices, about 1/2 inch thick.

Step 4

Chop the red and yellow bell peppers into 1-inch pieces.

Step 5

Peel the carrots and slice them diagonally into 1/4 inch thick slices.

Peel and cut the red onion into wedges.

Step 7

Peel the garlic cloves and mince them finely.
