  • 8 oz low fat turkey sausage
  • 4 large egg whites
  • 1 medium, chopped red bell pepper

  • 0.5 cup, shredded low fat cheddar cheese
  • 4 large whole wheat tortillas
  • 1 tablespoon olive oil
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon salt
  • 0.25 cup, chopped fresh cilantro
  • 0.5 cup salsa

Directions

Step 1

Heat olive oil in a large non-stick skillet over medium-high heat.

Step 2

Add chopped onion, red and green bell peppers, and minced garlic to the skillet. Sauté for about 5 minutes or until they are tender.

Add the low fat turkey sausage to the skillet. Cook for another 6-8 minutes, breaking the sausage into small pieces with a spatula, until fully cooked through.
