  • 2 pieces low-fat turkey sausage links
  • 4 large egg whites

  • 1 cup spinach leaves
  • 2 large whole wheat tortillas
  • 0.25 cup reduced-fat shredded cheddar cheese
  • 0.25 cup salsa
  • 1 for greasing non-stick cooking spray
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Begin by slicing the red bell pepper and onion into thin strips.

Step 2

Heat a non-stick skillet over medium heat and lightly coat with non-stick cooking spray.

Step 3

Add the turkey sausage links to the skillet. Cook them, turning occasionally, until fully cooked through and browned on all sides, about 6-8 minutes. Remove from skillet and slice into small pieces.

Step 4

In the same skillet, add the red bell pepper, onion, and a pinch of salt and black pepper. Cook until the vegetables are softened, about 3-4 minutes.
