Ingredients

  • 8 Eggs
  • 4 Egg whites
  • 4 oz Low-fat chicken sausage
  • 1 cup Low-fat shredded cheddar cheese
  • 1 cup Skim milk
  • 0.5 cup Red bell pepper
  • 2 tbsp Green onions
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 1 as needed Cooking spray

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Lightly coat a 12-cup muffin tin with cooking spray.

Step 3

Chop the low-fat chicken sausage into small cubes and finely dice the red bell pepper.

Step 4

In a large mixing bowl, whisk together the eggs and egg whites until fully combined.

Add in the skim milk, salt, and black pepper, then mix well.

In a non-stick skillet over medium heat, cook the chicken sausage until lightly browned. Remove from heat.
