  • 60 ml Dark rum
  • 100 g Raisins
  • 500 ml Skimmed milk
  • 1.5 tbsp Cornstarch
  • 80 g Granulated sugar
  • 1 tsp Vanilla extract
  • 200 g Low-fat Greek yogurt

Directions

Step 1

Begin by soaking the raisins in dark rum. Allow them to sit for at least 1 hour, preferably overnight, to absorb the rum.

Step 2

In a medium saucepan, combine 400 ml of skimmed milk and sugar. Warm over medium heat until the sugar dissolves completely, stirring occasionally. Don't let it come to a boil.

Step 3

In a small bowl, mix the remaining 100 ml of skimmed milk with cornstarch until smooth.

Add the cornstarch mixture to the warm milk and sugar mixture in the saucepan. Continue cooking over medium heat while stirring constantly until the mixture thickens enough to coat the back of a spoon, about 5-7 minutes.
