Ingredients

  • 500 grams Boneless, skinless chicken breast
  • 1 tablespoon Olive oil
  • 2 tablespoons Lemon juice
  • 3 units Garlic cloves, minced
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Brown rice
  • 2 cups Low sodium chicken broth
  • 2 tablespoons Chopped fresh parsley

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

In a small bowl, mix together the olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper to create a marinade.

Place the chicken breasts in a shallow dish and pour the marinade over them. Turn the chicken to coat each piece thoroughly. Let them marinate for at least 10 minutes, or up to 30 minutes if time allows.

While the chicken is marinating, rinse the brown rice under cold water until the water runs clear. This helps remove excess starch and encourages fluffier rice.
