Ingredients

  • 3 large Red bell peppers
  • 2 cloves Garlic cloves
  • 1 cup Low-fat Greek yogurt
  • 2 tablespoons Lemon juice
  • 1 teaspoon Olive oil
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon, chopped Fresh parsley

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash the red bell peppers and place them on a baking sheet lined with parchment paper.

Step 3

Roast the peppers in the preheated oven for about 30 minutes, turning them occasionally, until the skin is charred and they are tender.

Once roasted, remove the peppers from the oven and place them in a bowl. Cover the bowl with plastic wrap and let them steam for about 10 minutes to loosen the skin.
