Ingredients

  • 1200 grams Beef Cuvette
  • 1 tablespoon Olive oil
  • 4 units Garlic cloves
  • 2 tablespoons Fresh rosemary
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 250 ml Low sodium beef broth
  • 1 tablespoon Fresh thyme
  • 1 tablespoon Lemon juice

Directions

Step 1

Preheat your oven to 200°C (390°F).

Step 2

Pat the beef cuvette dry with paper towels to ensure a good sear and place it on a cutting board.

Step 3

Peel and mince the garlic cloves.

Step 4

In a small bowl, combine the olive oil, minced garlic, fresh rosemary, salt, and black pepper.

Step 5

Rub this mixture generously over the entire surface of the beef cuvette, ensuring even coverage.

Step 6

Place the beef in a roasting pan with a wire rack at the bottom to allow air to circulate.

Step 7

Add the low sodium beef broth to the bottom of the roasting pan to add moisture during cooking.

Step 8

Roast the beef for 60 minutes, basting it with the pan drippings every 20 minutes.

Step 9

After 60 minutes, check the internal temperature with a meat thermometer; it should reach 63°C (145°F) for medium rare.

Step 10

If the temperature is lower, return the beef to the oven and check every 10 minutes until it reaches the desired temperature.

Step 11

Once cooked, remove the beef from the oven, cover with aluminum foil, and let it rest for 10 minutes.

Step 12

Garnish the roast with fresh thyme and drizzle with lemon juice before slicing and serving.
