Ingredients

  • 500 grams Pork tenderloin
  • 250 ml Chicken broth
  • 100 ml White wine
  • 4 cloves Garlic cloves
  • 1 teaspoon Thyme
  • 1 leaf Bay leaf
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Dijon mustard

Directions

Step 1

Cut the pork tenderloin into medium-sized pieces removing any excess fat.

Step 2

Peel and slice the garlic cloves thinly.

Step 3

In a large pot or Dutch oven, combine the pork pieces, chicken broth, white wine, sliced garlic, thyme, bay leaf, salt, and black pepper.

Step 4

Bring the mixture to a gentle simmer over medium heat, then reduce the heat to low, cover, and let it cook slowly for about 3.5 to 4 hours.

Step 5

Stir occasionally and check to make sure the liquid is barely covering the pork. Add a bit more broth if necessary.

Step 6

Once the pork is tender enough to be easily shredded with a fork, remove from the heat and let it cool slightly.

Step 7

Use two forks to shred the pork into fine strands directly in the cooking pot, making sure to incorporate some of the cooking juices for moisture, but not too much as this is a low-fat version.

Step 8

Mix in the Dijon mustard to add a tangy depth of flavor.

Step 9

Transfer the rillettes to a serving bowl or spread into a terrine mold for a classic presentation.

Step 10

Cover and refrigerate for at least 4 hours or overnight to allow the flavors to meld and the rillettes to set.

Step 11

Serve chilled, with crusty bread or crackers.
