Ingredients

  • 1 lb Lean ground beef (96% lean or leaner)
  • 1 cup Rice Krispies cereal
  • 2 large Egg whites
  • 0.25 cup Low-sodium ketchup
  • 1 small Yellow onion, finely chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Low-sodium soy sauce
  • 1 teaspoon Dried parsley
  • 0.5 teaspoon Dried thyme
  • 0.25 teaspoon Black pepper
  • 0.25 teaspoon Salt (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a loaf pan with non-stick spray or line it with parchment paper.

Step 2

In a large mixing bowl, combine the ground beef, Rice Krispies cereal, egg whites, and ketchup.

Step 3

Add the finely chopped onion, minced garlic, Worcestershire sauce, soy sauce, parsley, thyme, black pepper, and salt (if using). Mix everything gently but thoroughly, making sure all the ingredients are evenly incorporated.

Step 4

Transfer the mixture into the prepared loaf pan and press it down gently to form an even layer.

Step 5

Bake in the preheated oven for about 40-45 minutes, or until the internal temperature of the meatloaf reaches 160°F (71°C).

Step 6

Remove the meatloaf from the oven and let it rest for 5–10 minutes to allow the juices to redistribute.

Step 7

Slice the meatloaf into even portions and serve warm. It pairs well with steamed vegetables or a light salad for a wholesome, low-fat meal.
