  • 2 medium red beets

  • 1 tablespoon fresh dill

Directions

Step 1

Preheat your oven to 400°F (200°C).

Wash the beets thoroughly and trim off the greens, if attached. Wrap each beet individually in aluminum foil.

Place the wrapped beets on a baking sheet and roast in the preheated oven for 50 to 60 minutes, or until they are tender when pierced with a fork.

Allow the beets to cool enough to handle, then peel them. The skins should slide off easily.
