Ingredients

  • 150 grams Glutinous rice flour
  • 180 milliliters Water
  • 20 grams Sugar
  • 20 grams Cornstarch
  • 200 grams Canned red bean paste (low-fat)
  • 1 pinch Salt

Directions

Step 1

In a medium mixing bowl, combine the glutinous rice flour, sugar, and a pinch of salt.

Step 2

Gradually add water to the flour mixture, stirring continuously until smooth and lump-free.

Step 3

Lightly coat a microwave-safe bowl with non-stick cooking spray. Pour the mochi mixture into this bowl.

Step 4

Cover the bowl loosely with plastic wrap or a microwave-safe lid, leaving a small gap for steam to escape.

Step 5

Microwave the mixture on high for 2 minutes. Remove the bowl and stir the contents using a wet spatula or spoon.

Step 6

Microwave again for 1-2 more minutes until the mochi dough becomes opaque and slightly sticky.

Step 7

Allow the mochi dough to cool for about 5 minutes.

Step 8

While the mochi cools, prepare your work surface by dusting it with cornstarch to prevent sticking.

Step 9

Once cooled, transfer the mochi dough onto the cornstarch dusted surface. Dust your hands with cornstarch and gently knead the dough until smooth.

Step 10

Divide the mochi dough into 8 equal pieces. Flatten each piece into a disc shape, keeping the edges thinner than the center.

Step 11

Place about a tablespoon of low-fat red bean paste in the center of each disc.

Step 12

Carefully fold the edges of the mochi over the red bean paste, pinching to seal and form a ball.

Step 13

Gently roll each mochi ball in your hands to smooth out the seams.

Step 14

Dust with a little more cornstarch to prevent sticking and place each finished mochi onto a tray lined with parchment paper.

Step 15

Serve immediately or store in an airtight container at room temperature for up to 48 hours. Enjoy your low-fat red bean mochi!
