Ingredients

  • 300 grams raspberries
  • 500 milliliters water
  • 50 grams sugar
  • 2 tablespoons lemon juice
  • 10 grams gelatin powder
  • 3 tablespoons cold water

Directions

Step 1

In a small bowl, mix the gelatin powder with cold water and let it sit to bloom for about 5 minutes.

Step 2

In a medium saucepan, combine the raspberries and 500ml of water. Bring to a boil over medium-high heat. Once boiling, reduce the heat and simmer for about 5 minutes or until the raspberries are very soft and breaking down.

Step 3

Strain the raspberry mixture through a fine sieve into a clean bowl, pressing down on the solids to extract as much juice as possible. Discard the solids.

Step 4

Return the strained raspberry juice to the saucepan. Stir in the sugar and lemon juice, and gently heat until the sugar fully dissolves.

Step 5

Remove the pan from heat and stir in the bloomed gelatin until completely dissolved.

Step 6

Pour the jelly mixture into serving glasses or a jelly mold and let it cool to room temperature.

Step 7

Once cooled, cover and refrigerate for at least 4 hours or until set.

Step 8

Serve the jelly chilled, and optionally garnish with additional fresh raspberries or a mint leaf.
