Ingredients

  • 1 head radicchio
  • 1 medium orange
  • 1 medium lemon
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon honey
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 cups baby spinach
  • 0.25 cup toasted almonds
  • 0.25 cup red onion

Directions

Step 1

Remove the outer leaves from the radicchio and discard any that are wilted or damaged. Cut the radicchio head in half and remove the core. Chop the radicchio into bite-sized pieces and place them in a large salad bowl.

Step 2

Peel the orange, removing all the white pith, and separate it into segments. Cut each segment into halves or thirds and add to the radicchio.

Step 3

Juice the lemon and measure out about 2 tablespoons of juice. In a small bowl, whisk together the lemon juice, extra-virgin olive oil, honey, salt, and black pepper to create the citrus dressing.

Step 4

Thinly slice the red onion and add it to the salad bowl along with the baby spinach.
