Ingredients

  • 4 large egg yolks
  • 2 large egg whites
  • 200 ml coconut milk
  • 80 grams unsweetened shredded coconut
  • 100 grams sugar substitute
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch
  • 1 for greasing butter-flavored cooking spray
  • 500 ml water

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

In a medium bowl, whisk together the egg yolks and egg whites until well combined and slightly frothy.

Step 3

Add the coconut milk, unsweetened shredded coconut, sugar substitute, vanilla extract, and cornstarch to the egg mixture.

Step 4

Mix all the ingredients thoroughly to form a smooth batter without any lumps.

Step 5

Lightly grease the inside of 8 muffin tins or ramekins with butter-flavored cooking spray.

Step 6

Pour the mixture evenly into the prepared tins or ramekins.

Step 7

Place the tins or ramekins into a larger baking dish, filling the dish with the 500 ml of water to create a water bath. The water should reach halfway up the sides of the tins or ramekins.

Carefully place the baking dish in the preheated oven and bake for approximately 45 minutes, or until the tops are golden and a toothpick inserted in the center comes out clean.

Remove from the oven and allow the quindim to cool in the water bath for about 10 minutes.

Once cooled, carefully remove each quindim from the tin by running a small knife around the edges, then invert onto a plate to unmold.
