Ingredients

  • 1 sheet ready-made shortcrust pastry
  • 2 large fresh leeks
  • 1 tablespoon extra virgin olive oil
  • 3 large eggs
  • 1 large egg white
  • 200 milliliters skim milk
  • 50 grams grated low-fat cheese
  • 0.25 teaspoon nutmeg
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Preheat the oven to 200°C (390°F).

Roll out the shortcrust pastry and line a 23-cm (9-inch) quiche or pie tin, trimming any excess. Prick the base with a fork and chill in the refrigerator for 10 minutes.

While the pastry is chilling, clean the leeks thoroughly. Slice off the dark green tops and roots, leaving the white and light green parts. Slice the leeks thinly.
