Ingredients

  • 1.5 lbs pork tenderloin
  • 1 cup filtered water
  • 0.5 cup apple cider vinegar
  • 0.5 cup low sodium chicken broth
  • 2 tablespoons tomato paste
  • 1 tablespoon yellow mustard
  • 1 tablespoon Worcestershire sauce
  • 2 cloves minced garlic
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon liquid smoke
  • 1 tablespoon brown sugar
  • 12 pieces whole wheat slider buns
  • 2 cups coleslaw mix
  • 0.25 cup light ranch dressing

Directions

Step 1

Place the pork tenderloin in a slow cooker.

Step 2

In a medium bowl, whisk together the water, apple cider vinegar, chicken broth, tomato paste, yellow mustard, Worcestershire sauce, minced garlic, smoked paprika, black pepper, onion powder, liquid smoke, and brown sugar until well combined.

Step 3

Pour the sauce mixture over the pork tenderloin in the slow cooker.

Step 4

Cover and cook on low for 6-8 hours, or until the pork is tender and easily pulls apart with a fork.

Step 5

Once the pork is done, remove it from the slow cooker and shred the meat using two forks.

Step 6

Return the shredded pork to the slow cooker and stir it into the sauce to coat thoroughly.

Step 7

In a medium bowl, combine the coleslaw mix and light ranch dressing. Toss until the coleslaw is evenly coated with the dressing.

Step 8

To assemble the sliders, split the whole wheat slider buns and lightly toast them, if desired.

Step 9

Place a portion of the pulled pork on each bun, followed by a scoop of the coleslaw.

Step 10

Serve the sliders warm and enjoy!
