Ingredients

  • 1.25 cups Warm water
  • 2.25 teaspoons Active dry yeast
  • 2 tablespoons Honey
  • 3.5 cups All-purpose flour
  • 1 teaspoon Salt
  • 0.25 cup Unsweetened applesauce
  • 0.33 cup Baking soda
  • 5 cups Water
  • 1 tablespoon Coarse sea salt

Directions

Step 1

In a large mixing bowl, combine 1.25 cups of warm water, active dry yeast, and honey. Let it sit for about 5 minutes until frothy.

Step 2

Add the all-purpose flour, 1 teaspoon salt, and unsweetened applesauce to the yeast mixture. Mix until a dough forms.

Step 3

Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.

Step 4

Place the dough in a lightly greased bowl, cover it with a clean towel, and let it rise in a warm spot until doubled in size, about 1 hour.

Step 5

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 6

In a large pot, bring 5 cups of water to a boil. Slowly add the baking soda, taking care as it may bubble up.

Step 7

Divide the dough into two equal portions and shape each into a tight round loaf.

Step 8

Place each loaf in the boiling baking soda water one at a time for 30 seconds on each side. Remove with a slotted spoon and place on the prepared baking sheet.

Step 9

Sprinkle the loaves with coarse sea salt.

Step 10

Using a sharp knife, carefully score an ‘X’ on top of each loaf.

Step 11

Bake in the preheated oven for 20-25 minutes or until the pretzel bread is deeply browned and sounds hollow when tapped on the bottom.

Step 12

Let cool on a wire rack before slicing and serving.
