Ingredients

  • 4 medium Russet potatoes
  • 1 medium Yellow onion
  • 2 stalks Celery stalks

  • 4 cups Low-sodium vegetable broth
  • 1 cup Low-fat milk
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup Chives

Directions

Step 1

Peel the potatoes and cut them into 1-inch cubes. Finely chop the onion and celery, and mince the garlic.

Heat the olive oil in a large pot over medium heat. Add the onion, celery, and garlic, and sauté for 5 minutes or until the onions are translucent.
