Ingredients

  • 4 pieces Russet potatoes (medium-sized)
  • 1 bottle Olive oil spray
  • 1 cup Low-fat shredded cheddar cheese
  • 4 slices Cooked turkey bacon
  • 0.5 cup Non-fat plain Greek yogurt
  • 2 tablespoons Chopped green onions
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash and scrub the potatoes thoroughly, then prick each potato with a fork a few times to allow steam to escape.

Step 3

Place the potatoes on a baking sheet and bake for 35-40 minutes, or until they are tender when pierced with a knife.

Step 4

Remove the potatoes from the oven and let them cool until they are safe to handle, about 10 minutes.

Step 5

Cut each potato in half lengthwise and carefully scoop out most of the flesh, leaving about 1/4 inch of potato attached to the skin. Reserve the potato flesh for another use, like mashed potatoes.

Spray the inside and outside of each potato skin lightly with olive oil spray. Sprinkle the salt and black pepper evenly over the skins.

Place the potato skins back on the baking sheet, cut side up, and bake for another 8-10 minutes until the edges become crispy.

While the skins are baking, chop the cooked turkey bacon into small pieces.

Once the skins are crispy, remove them from the oven and sprinkle each with a small amount of shredded low-fat cheddar cheese and the chopped turkey bacon.

Return the potato skins to the oven and bake for another 5 minutes, or until the cheese is melted and bubbly.

Remove the potato skins from the oven and let them cool slightly. Top each with a dollop of non-fat Greek yogurt and a sprinkle of chopped green onions.
