Ingredients

  • 4 medium Potatoes
  • 1 medium Onion
  • 1 medium Tomato
  • 1 medium Green chili
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Cumin seeds
  • 1 teaspoon Coriander powder
  • 0.25 teaspoon Red chili powder
  • 0.5 teaspoon Garam masala
  • 1 teaspoon Salt
  • 2 tablespoons Cilantro
  • 1 tablespoon Lemon juice
  • 1 teaspoon Cooking oil
  • 0.5 cup Water

Directions

Step 1

Peel the potatoes and cut them into small cubes.

Step 2

Finely chop the onion, tomato, and green chili.

Step 3

Heat 1 teaspoon of oil in a non-stick pan over medium heat.

Step 4

Add cumin seeds and let them sizzle for about 30 seconds.

Step 5

Add chopped onion and green chili. Saute until the onion becomes translucent, about 3-4 minutes.

Step 6

Add chopped tomato, turmeric powder, coriander powder, red chili powder, and salt. Cook for another 3 minutes until the tomatoes soften.

Step 7

Add the potato cubes and stir to coat them well with the spices.

Step 8

Add 0.5 cup of water, mix well, and cover the pan. Reduce the heat to low and let it simmer for 10-12 minutes or until the potatoes are tender.

Step 9

Once the potatoes are cooked, uncover, and increase the heat to medium-high for 2-3 minutes to evaporate excess water if necessary.

Step 10

Sprinkle garam masala and stir well.

Step 11

Turn off the heat and add lemon juice and chopped cilantro. Mix thoroughly.

Step 12

Serve the low-fat potato sabji hot with roti, chapati, or rice.
