Ingredients

  • 500 grams Potatoes
  • 1 medium Onion
  • 1 medium Tomato
  • 1 small Green chili
  • 1 inch piece Ginger
  • 2 cloves Garlic
  • 1 teaspoon Cumin seeds
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Red chili powder
  • 1 teaspoon Coriander powder
  • 0.5 teaspoon Garam masala
  • 1 teaspoon Salt
  • 2 tablespoons Cilantro
  • 1 cup Water
  • 1 teaspoon Olive oil

Directions

Step 1

Peel and dice the potatoes into small cubes and set them aside.

Step 2

Finely chop the onion, tomato, and green chili, and mince the ginger and garlic.

Step 3

Heat 1 teaspoon of olive oil in a large non-stick pan over medium heat.

Step 4

Add cumin seeds to the oil and let them sizzle for about 30 seconds until fragrant.

Step 5

Add the minced ginger and garlic, sautéing for a minute until they start to brown slightly.

Step 6

Stir in the chopped onion and green chili, cooking until the onions become translucent.

Step 7

Add the diced tomato and cook for 2-3 minutes until it softens, stirring occasionally.

Step 8

Sprinkle turmeric powder, red chili powder, and coriander powder into the mixture and stir well.

Step 9

Add the diced potatoes to the pan, mixing them thoroughly with the spice mixture.

Step 10

Pour 1 cup of water into the pan, add salt, and stir well.

Step 11

Cover the pan with a lid and let the mixture cook for 15 minutes on low heat, stirring occasionally to ensure that the potatoes don't stick to the pan.

Step 12

Check the potatoes for doneness; they should be fork-tender. If needed, cook for a few more minutes.

Step 13

Once the potatoes are cooked, sprinkle garam masala over the top and stir gently.

Step 14

Garnish with freshly chopped cilantro before serving.

Step 15

Serve hot as a side dish or with roti or rice for a complete meal.
