Ingredients

  • 1 sheet Ready-made puff pastry
  • 240 ml Skim milk
  • 2 tablespoons Cornstarch
  • 75 grams Sugar
  • 3 large Egg yolks
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Ground cinnamon
  • 0.125 teaspoon Salt
  • 0.5 teaspoon Lemon zest
  • 0 Non-stick cooking spray

Directions

Step 1

Preheat your oven to 220°C (428°F).

Step 2

Lightly spray a muffin tin with non-stick cooking spray.

Step 3

Unroll the puff pastry sheet and cut into 12 equal squares.

Step 4

Fit each puff pastry square into the muffin tin cups, pressing gently to mold them to the sides.

Step 5

In a small saucepan, combine the skim milk and cornstarch. Whisk over medium heat until the mixture begins to thicken, about 3-4 minutes.

Step 6

Add the sugar to the milk mixture and continue to whisk until it dissolves completely.

Step 7

Remove from heat and slowly whisk in the egg yolks, making sure the yolks don’t cook too fast.

Step 8

Add the vanilla extract, ground cinnamon, salt, and lemon zest, whisking until everything is well combined and smooth.

Step 9

Pour the custard mixture evenly into the prepared puff pastry cups.

Step 10

Bake in the preheated oven for 15-20 minutes, or until the pastry is golden brown and the custard is set and slightly browned on top.

Step 11

Remove from the oven and allow to cool in the tin for about 5 minutes.

Step 12

Carefully remove the tarts from the muffin tin and transfer them to a wire rack to cool completely.

Step 13

Serve warm or at room temperature for best texture and flavor.
