Ingredients

  • 300 grams lean pork tenderloin
  • 1 tablespoon olive oil
  • 1 medium, diced onion
  • 2 medium, peeled and sliced carrots
  • 2 diced celery stalks
  • 3 cloves, minced garlic
  • 6 cups low-sodium chicken broth
  • 1 tablespoon soy sauce
  • 1 tablespoon, grated fresh ginger
  • 150 grams egg noodles
  • 2 cups baby spinach
  • 3 stalks, sliced green onions
  • 0.25 cup, chopped fresh cilantro
  • 1 teaspoon black pepper
  • 0.5 teaspoon salt

Directions

Step 1

Trim any visible fat from the pork tenderloin and slice it into thin strips.

Step 2

In a large pot, heat the olive oil over medium heat. Add the pork slices and cook until they are just browned. Remove them from the pot and set aside.

Step 3

In the same pot, add the diced onion, sliced carrots, and celery. Sauté for 5-7 minutes until the vegetables start to soften.

Step 4

Add the garlic and grated ginger, stirring for an additional minute until fragrant.

Step 5

Pour in the low-sodium chicken broth and soy sauce, stirring to combine. Bring the mixture to a gentle boil.

Step 6

Add the egg noodles to the pot and cook according to package instructions until they are al dente.

Step 7

Return the pork slices back into the pot and reduce the heat to a simmer. Cook for another 5 minutes to ensure the pork is cooked through.

Step 8

Stir in the baby spinach and green onions until the spinach wilts, about 2 minutes.

Step 9

Season the soup with salt and black pepper to taste.

Step 10

Serve hot, garnished with freshly chopped cilantro.
