Ingredients

  • 1 pound pork tenderloin
  • 2 teaspoons olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon garlic powder
  • 8 ounces baby bella mushrooms
  • 1 cup low-sodium chicken broth
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 0.5 cup low-fat sour cream
  • 2 tablespoons fresh parsley

Directions

Step 1

Trim the pork tenderloin of any visible fat and silver skin. Cut the tenderloin into 1-inch thick medallions.

Step 2

Season the pork medallions with salt, black pepper, onion powder, and garlic powder on both sides.

Step 3

Heat 1 teaspoon of olive oil in a non-stick skillet over medium-high heat.

Step 4

Add pork medallions to the skillet and cook for 3-4 minutes on each side until browned and cooked through. Remove from skillet and set aside.

Step 5

Slice the baby bella mushrooms thinly.

Step 6

In the same skillet, add the remaining 1 teaspoon of olive oil. Add mushrooms and cook, stirring occasionally, until softened and golden brown, about 5-6 minutes.

Step 7

Pour in the low-sodium chicken broth and bring to a simmer.

Step 8

In a small bowl, mix cornstarch with water until smooth. Add this mixture to the skillet and stir continuously until the sauce starts to thicken.

Step 9

Reduce heat to low and stir in the low-fat sour cream, mixing until the sauce is smooth and creamy. Adjust seasoning with additional salt and pepper if necessary.

Step 10

Return the pork medallions to the skillet, turning them to coat with the creamy mushroom sauce. Cook for an additional 1-2 minutes to heat through.

Step 11

Garnish with chopped fresh parsley before serving.
