Directions

Step 1

In a large bowl, whisk together the flour, skim milk, eggs, and 1/4 teaspoon of salt until smooth. Let the batter rest for 10 minutes.

Heat a non-stick skillet over medium heat and lightly coat with cooking spray. Pour in a small amount of batter, swirling the skillet to evenly coat the bottom with a thin layer. Cook for 2 minutes until the edges start to lift, then flip and cook for another 1 minute. Repeat until all the batter is used, separating the crepes with parchment paper.
