  • 120 grams all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 60 grams unsweetened applesauce
  • 80 grams granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg white

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.

Step 3

In a separate large bowl, combine the unsweetened applesauce and granulated sugar, and whisk until the sugar is mostly dissolved.

Step 4

Add the vanilla extract and egg white to the applesauce mixture, and whisk until well combined.

Step 5

Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Avoid overmixing.

Step 6

Fold in the chopped pistachios until evenly distributed in the cookie dough.

Step 7

Using a spoon or a small cookie scoop, portion out tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.

Step 8

Gently press each cookie with the back of a spoon to slightly flatten.

Step 9

Bake in the preheated oven for 10-12 minutes, or until the edges of the cookies are lightly golden.

Step 10

Remove from the oven and let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
