Ingredients

  • 2 cups all-purpose flour

  • 0.75 cup unsalted pistachios, shelled and chopped
  • 2 pieces large eggs
  • 1 piece egg white
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon almond extract
  • 1 teaspoon lemon zest

Directions

Step 1

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

Step 2

In a large bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.

Step 3

In a medium bowl, whisk the eggs, egg white, and sugar until well combined. Add the vanilla extract, almond extract, and lemon zest to the egg mixture and mix well.

Combine the wet ingredients with the dry ingredients, mixing gently until a dough forms. Fold in the chopped pistachios.

Transfer the dough onto a lightly floured surface and shape it into a log approximately 12 inches long and 3 inches wide. Place the log onto the prepared baking sheet.
