Ingredients

  • 300 g Spinach and Ricotta Tortellini
  • 2 cups Fresh Basil Leaves
  • 1 cup Baby Spinach
  • 2 large Garlic Cloves
  • 0.5 cup Low-fat Parmesan Cheese
  • 2 tbsp Pine Nuts
  • 2 tbsp Extra Virgin Olive Oil
  • 2 tbsp Water
  • 1 tbsp Lemon Juice
  • 0.5 tsp Salt
  • 0.25 tsp Black Pepper

Directions

Step 1

1. Bring a large pot of salted water to a boil.

2. Add the tortellini to the boiling water and cook for about 6-8 minutes or according to the package instructions until al dente.

3. While the tortellini is cooking, prepare the pesto. In a food processor or blender, combine the fresh basil leaves and baby spinach.
